Extra Chessy Mac and Cheese (Cooking)




6 tablespoons unsalted butter

1/2 cup all purpose flour

3 cups whole milk

11/2 teaspoon salt

1/4 teaspoon ground white pepper

1/2 teaspoon ground dry mustard

1/4 teaspoon groung nutmeg

2 cups shredded mozzarella cheese

5 cups shredded sharp cheddar cheese divided

1/2 ounce valveeta cheese cubed

1 (16 ounce) package macaroni cooked

Preheat oven to 450.  Spray a 3-4 quart baking dish with non-stick spray.
In a large pot melt butter over medium- high heat.  Add flour, cook whisking 1 minuet.  Whisk in milk, salt, pepper, mustard, and nutmeg.  Gook whisking constantly until thickened 5-6 minutes.  Stir in mozzarella, 4 cups cheddar, and velveeta cheese, until smooth.  Remove from heat, stir in macaroni.  Pour into prepared dish
Bake for 10 minutes.  Sprinkle with remaining 1 cup cheddar cheese.  Bake until cheese melts 4-5 minutes more
